- 220g plain flour
- 2 tbsp brown sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 250g ricotta
- 300ml milk
- 2 eggs, separated
- 3 tbsp melted butter
- 1 tsp vanilla
- Butter and maple syrup to serve
Method

Whisk the flour, brown sugar, baking powder, and salt in a large bowl.

In another bowl, mix the ricotta, milk, egg yolks, melted butter, and vanilla, then fold into the dry ingredients.

Whip the egg whites to soft peaks and gently fold them in for lift; a few streaks are fine.

Cook ladlefuls on a buttered pan over medium heat until bubbles form and the edges set, then flip and cook until golden. Stack, top with butter, and drizzle with syrup.
